it's a dry contact -whatever you put in is whatever goes out..can be 12v,24v,220v..the 220v on the sticker is for power purposes..

why is there 2 connections for Temp sensors?

Heating or Cooling is determined in the settings mode, not by this. So the question remains, why two sensor hookups?

how does the differential function work without a second sensor please ?

This is the same as the STC-1000 except it has a dual display - the set point and the actual temperature. The differential it refers to is the hysteresis, which you can set in the settings. So for instance the temp goes down to 2 degrees and shuts down, then restarts when it goes back up to 4 degrees, which is 2 degrees hysteresis or differential.
