what size dog hole will these clamps fit?

These are designed for the standard Festool 20mm dog holes. So anything that fits that will work. I will note that if you're table is ¾ ~ 18mm thick you might need a washer or 2 between the under side of the table and the knob or cut off an ⅛ of an inch from the threaded rod. My tables are ¾ thick and the fit is not even snug. Washers fix it but ymmv.

Do i need to secure them with the screws for it to stay stable? As i cannot get underneath my top it would be impractical to have to screw them from the under side.

Ihave the worktop with the 20mm holes and I secure the clamps in the holes with their knob locks. If you don't have a drilled top you will need to put screws on which you can screw the clamps to
                                                                                                                    use them better still put sleeves in various places on the top and then screw the clamps when you will use them so you can use the clamps in multiple positions.

The holes in the bench are 20mm. If you follow European convention, they are 96mm apart from center to center, left to right, front to back. Only the bolt that connects the clamp to the bench dog and the knob

Hi, maybe a hit of an odd question, I have a couple of floor joists that need to be pushed apart slightly to space them correctly (which the builders didn’t see fit to do it seems) the space is tight did a soil pipe but I’m wondering if this tool might help a bit like a jack so I can then put a spacer in to hold the joist at correct distance?What is its minimum/maximum extension please?

Not used for that. Use some one handed ratchet clamps cheaper and available everywhere. most are reversable clamp or separate
